In 1884, Master Cutler Karl Elsener started his cutlery factory
in the small village of Ibach, Switzerland. In 1897, he crafted the
Victorinox Original Swiss Army Knife. Since that time, the Elsener
Family has continued to craft tools in the Victorinox tradition of
precision, durability and quality.
Forschner by Victorinox is one of the largest producers of
cutlery in the world today. You may already be familiar with
Victorinox Cutlery, distributed exclusively in the United States to
butchers and culinary professionals since 1884 under the brand name
R.H. Forschner.
These two prestigious brands have combined to become R.H.
Forschner by Victorinox.
Individuality
Forschner by Victorinox offers more than 300 styles and types of
blades suited exactly to specific functions or cutting tasks.
Paring, Boning, Butcher, Chef’s, Slicer/Carving, Bread,
Utility/Vegetable, Fillet/Fishing, Cleavers, and poultry knives come
in various styles and handle type.
Construction
Victorinox Swiss manufacturing offers the optimum combination of
state-of-the-art knife technologies blended with old world
craftsmanship.
The Blade
High carbon, stainless steels blades are hand finished at Victorinox
in Switzerland by skilled craftsmen. A special tempering process
produces an edge that can be retargeted over and over again, so the
knife can keep its original sharpness throughout its life.
The Handle
All Victorinox handles are ergonomically designed to minimize wrist
tension. They give you a natural fit in a traditional classic
rosewood, nylon and Fibrox. The patented Fibrox handles are NSF
approved, dishwasher safe and slip resistant.
Hygiene
Although cutlery steel is naturally sanitary , materials and
construction details of the handle should minimize crevices that
would offer hospitality to bacteria. Our nylon and Fibrox handles
are NSF approved.
Safety
A sure-grip handle with a finger guard is a valuable feature since
the handle inevitably gets greasy, wet, or both. Our Fibrox handles
are slip resistant when wet for maximum safety.
Microban
Microban product protection is incorporated into the handle during
the manufacturing process. It works continuously between washings to
help prevent the growth of bacteria, mold and mildew. This helps
reduce odor, stains and product degradation.
Fibrox Colored Handles
The same blade and handle material as our patented black Fibrox.
Useful in solving cross-contamination problems and for product usage
segmentation. They're also NSF certified.
Paring knives come in various styles , each with a particular
function:
- Bird’s Beak- for peeling any round fruit or vegetable.
- Chef’s- use as a miniature cook’s knife.
- Sheep’s Foot- this unique parer has a straight cutting
blade.
- Wavy Edge- use to cut the crust or skin with a soft inside.
Perfect for tomatoes.
Did you know?
- Wavy edge - especially useful for cutting soft products with
a hard crust (bread) or tough skin (sausages and tomatoes).
- Straight Edge- recommended for cutting raw meat, slicing
salmon and chopping vegetables. A straight edge can be sharpened
using a sharpening steel.
Diamond Steels will actually remove metal from the knife
blade. They can quickly put an edge on a knife that cannot be
sharpened with a regular steel.
